This is an extremely tasty Southwestern Style Macaroni and Cheese Recipe made Vegan style but is easily adaptable and interchangeable. Definitely give this one a try, It's so good!!!
Ingredients: 1. 3 cups elbow noodles ( add water to cook, follow your noodles directions) 2. 6 strips of Bacon 3. 1 can of green hatch chilies ( use what ever peppers you like) 4. 6 TBP butter 5. 1 roll of Ritz crackers ( or add more if you'd like) 6. 8 oz ( 2 cups) Cheddar cheese 7. 4 oz mozzarella cheese 8. 1 TBS dried onion flake 9. 1/8 tsp Smoked Paprika (Or to taste) 10. Sea Salt to taste 11. Pepper to taste 12. 2 Cups Almond milk ( or your choice of milk) 13. 1 TBS Turmeric (optional) Directions: Cook 3 cups of elbow noodles according to directions. Cook bacon and chop up into pieces (Like Bacon Bits). In a sauce pan melt 3 TBS butter then add into melted butter 1 pack of Ritz crackers, mix thoroughly. Add into a pot 2 cups of Cheddar cheese and 2 cups milk and 3 TBS butter using medium heat melt cheese in milk and butter, then add to your melted cheese your elbow noodles, 1 can of hatch chilies, 1/8 tsp smoked Paprika, 1 TBS dried onion flakes, bacon, Turmeric, and salt & pepper. Mix ingredients together well. Set oven to 350 Pour Macaroni mixture into a 9 x 12 casserole dish then sprinkle Mozzarella cheese on top then spread your Ritz cracker mixture over the top for a crust. Place into oven for 20 min but check on it so it doesn't burn. Take out and enjoy!!! Don't forget to share this video, it would sure help others trying to to find good vegan recipes, Thank you!!!
